
I never got swept up by the bacon craze of the early aughts. Bacon on a club sandwich? Yes. Bacon on cupcakes? Oh hell no. But, one thing to come out of the nation’s preoccupation with pork is bacon jam, which can make an excellent addition to a burger.

Some of the best uses of the ingredient are at Davanti Enoteca in San Diego’s Little Italy, where burgers are topped with griddled cheese curds, aioli, tomatoes confit, and arugula. There’s also a location in Carmel Valley. The Barrymore in Las Vegas and Carnitas’ Snack Shack also do bacon jam right.
But the best bacon jam so far is at Sea Rocket, where partner (and former chef) Chad White popularized the sometimes divisive condiment. Check out my review of the burger on AHT for the full scoop.
