
Just when you thought burrata couldn’t get any more awesome, comes this dish from Jsix: the Fried Burrata & Raw Black Kale Salad.
I’m sure your eye went right to the baseball-sized ball of burrata, lightly coated in bread crumbs and fried, and I don’t blame you. It’s a pretty genius presentation. Frying the cheese warms it up and makes it a bit meltier than usual, but it still maintains its smooth, creamy texture.
Below the burrata is a salad of black kale, “cooked” ceviche-style with lemon juice, garlic, and olive oil, which breaks down the kale, so it’s not so tough. Candied citrus peels (lemon, orange, and grapefruit) and candied shallots bring some brightness, and there’s also a swoosh of pine nut puree that you can incorporate into the salad, or drag the burrata through.
The burrata is part of Jsix’s new fall menu, debuting in October.
